ABSTRACT
Riau is one of the provinces in Indonesia that have
the largest palm oil plantation. This condition is followed by the growth of
palm oil mill in Riau. Therefore, palm oil plant as main material to produce
Crude Palm Oil (CPO) would be fulfilled. Polytechnic Kampar as institution of
education has specific purpose to have graduates that competence in palm oil
industries. Based on this purpose, Polytechnic Kampar was build a cooking oil
plant, so students can learn the real experience of cooking oil processing.
Furthermore, cooking oil plant was expected to be one of financial sources in
Polytechnic Kampar because it has commercial product. As the results of this
research, cooking oil plant could not operation commercially, because some of
equipments and machines that support the activity in cooking oil plant were not
working and broken. In addition, the quality of cooking oil as main product in
this plant was not eligible to sale because Free Fatty Acid (FFA) was high and
the odour of cooking oil has smelly. Furthermore, the price of cooking oil
would affect the decision of consumer to purchase this product.
