PENGARUH ASAM KEPING
TERHADAP REGENERASI MINYAK GORENG BEKAS

ABSTRACT
Cooking oil represent one of very staple required by
Indonesia society, especially in food processing of food materials. Cooking oil
is usually used as a medium for frying food and flavour enhancer. Number of
cooking oil used cooking oil will result in large numbers. Aware of the dangers
of used frying oil consumption which can cause various diseases, it is
necessary to attempt to recycle or use it for not polluting the environment
that is as raw material for making soap or as a medium frying pan. Recycling
used frying oil has been carried out in various ways and materials. On this
occasion the author tries to regenerate (recycle) used frying oil using pieces
of acid (“gelugur” acid) and see theists effect on the used cooking oil .
Before and after the regenerated, analyze acid number, colour (turbidity) and
water content to be known effect of acid on the regeneration of pieces of used
frying oil. From the research, obtained optimum results for acid number of 0.81
(mg KOH / g) in 6% of the mass gelugur acid and temperature of 80 oC,
colour (NTU) 5.23 6% on “gelugur” acid mass and temperature of 100 oC
and moisture 0.035 % w / w to 8% the mass of “gelugur” acid and 100 oC.
