ABSTRACT
Pangasius
is one of catfish types in Indonesia. This fish had
an economic value as
fillets and smoked fish. The processing of the fish had made some solid wastes
like bones, liver, and head. On the other hand, these wastes contained calcium and
some minerals. In this research, the waste from fish processing would be use to
make fish flour. The fish flour was made from bones, liver, and head fish and
then analyzed to determine: water content, ash, fat and calcium. The water content in the liver, bones
and heads
flour, namely 46%, 58% and 64%, ash content of the liver, bones and heads flour was 26%, 38% and 42%, while fat content of liver, bones and heads flour namely
21.6%, 24.6% and 23.4% and calcium contained in liver, bones and head flour was 9.7%, 9.6% and 20.4%. Based on this analysis, liver, bones and head flour had a good
quality and met the fish flour quality (SNI No 01-2715-1996).
